Miso Salmon with Miso Aubergine
Sweet, savoury miso glaze coats salmon and aubergine, colouring at the edges in Charlie. The aubergine turns soft while the fish stays moist, with sesame seeds to finish. Two ingredients that welcome the same glaze, cooked in their own time.

Setting up Charlie
- Add the mirin, sake, sugar and miso to a pan and cook over medium heat for 5 minutes until all the sugar is dissolved and the marinade starts to bubble. Leave to cool.
- Slice the aubergines in half. Score the aubergine diagonally with a knife to create diamond-shaped cuts. Be careful not to pierce the skin all the way through.
- Put a tablespoon of oil on each aubergine half, making sure to work the oil into the flesh for even cooking.
- Once the marinade has cooled, coat the salmon portions lightly in the marinade and place them on a baking tray.
- Place the aubergines on a separate baking tray and, using a brush, lightly coat the flesh side with the marinade.
- Place the aubergines in the Charlie Oven at 200°C (390°F) and cook for 10 minutes.
- After 10 minutes, add the salmon tray to the oven and cook both for a further 10 minutes.
- Remove the salmon and aubergines from their baking trays directly onto the cooking rack, coat them with the remaining marinade and top with sesame seeds. Cook for a final 10 minutes.
- Serve with rice and the rest of the marinade heated through as a sauce.
