Cooked in the Charlie Charcoal Oven
Fire-Roasted Baby Potatoes
Bart Van Der Lee keeps these baby potatoes simple: fire-roasted in Charlie, with coloured skins, soft centres and a little olive oil to finish. Sometimes a good potato needs very little encouragement.

Setting up Charlie
- Wash the potatoes and boil them in salted water until cooked through.
- Drain the water and leave them to cool down.
- Place the potatoes on the Charlie Oven Cooking Rack in your preheated Charlie Oven at 180°C (355°F) and bake them for 15 to 20 minutes.
- Toast the skin well to give that smoky aroma. Do not be afraid to get them close to the fire.
- Finish the potatoes with 1 tbsp olive oil and a pinch of Maldon salt just before serving.
