BBQ Side of Salmon
A simple yet stunning way to cook a whole side of salmon in your Charlie Oven. Laid on a bed of sliced oranges, fennel, and fresh parsley, the fish roasts beautifully at high heat with a subtle smoky finish from a piece of oak wood.

Method

- Trim the salmon and remove any scales left on the fish.
- Slice the oranges and fennel into 5cm slices.
- Roughly chop the parsley.
- Select a large heatproof tray - a gastronome pan works well and is available from catering suppliers or Amazon.
- Place the orange and fennel slices and the flat leaf parsley across the bottom of the tray.
- Drape the salmon across the top, drizzle with olive oil and season with salt and pepper.
- Place in the Charlie Oven pre-heated to 200 degrees Celsius and cook for around 30 minutes.
- Check for doneness by sliding a small knife into the thickest part of the fish - if there is no resistance, it is done.
- Remove from the oven promptly as the fish will continue to cook once out of the oven.
