We're delighted to have Ruben Dawnay of Ruben's Reuben join us for a very special masterclass: smoking, curing and sausage making.  Ruben was recently voted by Conde Nast as one to watch at the New Top Restaurant Awards.  They described him as changing the face of barbecue in London.

In this masterclass, Ruben will share his encyclopaedic knowledge of how to smoke and cure meats.  With a bit of pickling thrown in for good measure. Ruben will show you, by learning these classic processes and techniques, how they can be applied to all sorts of different meats and different flavour combinations. 

Ruben is a genius when it comes to smoking food.  He will take us on a journey, from foods that can be effectively smoked during the class itself, like the fabulous smoked merguez sausages we'll be making from scratch, to those that take several days to cook. 

Ruben is a rising star in the London culinary scene. He "rose from the lockdown ashes", smoking meat and curing fish from his parents' garden in Brixton. Paying homage to his Polish-Jewish heritage, Ruben’s Reubens Brixton Smokehouse was born.

Fast forward a few years, and Ruben has been recognised by Code Hospitality as one of their 30 under 30 Rising Stars to Watch, dominating pop-ups across London.

Last year at Meatopia, Ruben's dish was the absolute standout dish for us.  We're so excited that he's joining us to put his skills into action with the Charlie Oven. 

Ruben's style is all about honouring the traditional techniques of smoking food, while putting a fresh, contemporary spin on things, inspired by growing up in London.
