This hands-on masterclass shows you how to create lively dough from scratch and then bake it in the Charlie Oven for a crust that sings and a crumb with character. Lunch is charcoal-fired pizzas that you shape, top and bake yourself.

What you will learn

  • How to mix feed and care for a healthy starter so it thrives at home
  • How to make dough with the right hydration and salt balance
  • How to build strength through stretch and folds and judge when the dough is ready
  • How to shape for tension and rise
  • How to prove, score and bake in the Charlie Oven for superb crust and spring
  • How to use the Charlie Oven for baking bread and for fast high-heat pizza sessions

On the day

  • Morning session mixing starter and dough then learning stretch and folds
  • Charcoal-fired pizzas for lunch made by you with seasonal toppings
  • Afternoon session: shaping, proving, scoring and baking your loaf in Charlie
  • Plenty of tips on timing temperature and planning bakes around real life

Fantastic weekend at Tresillion House in Newquay Cornwall. Very well organised hands on event with guest chef Andrew Clark showing us new cooking techniques and food combinations with some amazing top quality ingredients. Thank you Charlie Ovens for organising this event, I would go back tomorrow and highly recommend this to anyone else looking to improve there outdoor cooking skills.
