Join us for a hands-on cooking experience where you’ll create elegant, fire-cooked Japanese dishes using the Charlie Oven. This immersive masterclass blends bold flavours, delicate techniques, and live-fire cooking, all designed to showcase the versatility of your charcoal oven.

Led by Chef Kate Fortescue

After a successful career in criminal law, Kate trained as a chef at Leiths School of Food and Wine — trading courtrooms for professional kitchens. From frying pan to fire!

Kate now works as a chef, nutrition advisor and food writer. She specialises in nutrition in culinary practice and recently received a professional qualification in authentic Japanese cuisine from the Tokyo School of Sushi and Washoku. Her passion for Japanese flavours and fire cooking comes to life in this unique Charlie Oven masterclass.

A refreshing citrus cocktail to kick off the masterclass and awaken the palate.

Starter

 

Fillet Beef Tataki with Ponzu and Asparagus, Mooli & Radish Salad
Flash-seared beef, rare and tender, with a zesty ponzu kick. Served with a crisp salad and bold ginger-garlic dressing. Clean, punchy, and full of contrast.

Main

Negima Yakitori – Chicken and Spring Onion Skewers with Tare Glaze
Traditional Japanese street food, cooked over fire the Charlie way. Sticky, smoky, and packed with flavour.

Miso-Marinated Chalk Stream Trout
Delicate British trout meets punchy miso in this quick-fire dish. The miso adds depth and umami, while the fire gives it that crisp skin and just-cooked centre.

Charred Aubergine & Tenderstem Broccoli with Goma-ae Sesame Dressing
A proper flavour bomb. Smoky aubergine and crisp-edged broccoli, finished with a nutty, savoury sesame dressing. Bold, simple, and moreish.

Hijiki Rice with Homemade Furikake
A twist on classic Japanese rice – gently seasoned, dotted with hijiki seaweed and topped with sesame, nori, and a little chilli crunch. The perfect base for everything else.

Dessert

Japanese Cheesecake with Miso Caramel and Roasted Peaches
Light, fluffy cheesecake with rich miso caramel, fire-roasted peaches, and a crunchy pistachio-sesame crumb. Sweet, salty, and indulgent.

Fantastic weekend at Tresillion House in Newquay Cornwall. Very well organised hands on event with guest chef Andrew Clark showing us new cooking techniques and food combinations with some amazing top quality ingredients. Thank you Charlie Ovens for organising this event, I would go back tomorrow and highly recommend this to anyone else looking to improve there outdoor cooking skills.
