    South American-Inspired Masterclass Retreat at Tresillian House, Cornwall 

    Learn to cook South American-inspired food

    South American fire cooking sets the tone for this year’s retreat. Over the weekend, we will take inspiration from the great fire-cooking traditions of Argentina, Brazil and Patagonia, exploring bold flavours, generous cuts of meat and dishes designed to be shared around the fire.

    Expect techniques for cooking big cuts slowly over charcoal, grilling steaks and chorizo over high heat and building bright herb sauces that bring richness and freshness to the table. Think along the lines of a whole picanha cooked over charcoal and carved at the table, low-and-slow beef ribs, grilled chorizo with salsa criolla, lamb cooked low and slow and fish or shellfish cooked over the coals.

    The exact menu will be defined closer to the time. 

    Sourdough and bread baked through the weekend

    Bread will run right through the retreat. We will mix and bake sourdough together, learning how fermentation works, how to shape your dough and how to bake beautiful loaves in the Charlie Oven. There will be warm bread on the table with almost every meal, alongside simple fire-cooked flatbreads and the sort of things that are best eaten straight from the oven with good butter.

    Evening experiences

    Alongside the cooking, the weekend includes a wine tasting with a sommelier and a cocktail-making class. It is all part of the retreat experience and adds to the weekend's relaxed rhythm.

    The setting

    This is the third year we are returning to Tresillian House, and there is a reason we keep coming back. It is a beautiful Georgian country house in the Cornish countryside with space to cook, eat and slow down properly. Jonny and Alan are wonderful hosts and make the whole place feel relaxed and welcoming from the moment you arrive.

    Time to relax

    There is plenty of time between cooking sessions to enjoy the gardens, take a walk, book a massage, read in the sun or simply sit with a glass of wine and do nothing at all.

    Includes: Accommodation, all meals, drinks, classes, ingredients and equipment

    Spaces are limited, and this retreat sells out every year.

    Prices are per person based on two people sharing.

    Paying in instalments

    If you would like to pay in instalments, choose bank deposit at checkout. Pay half to secure your place, and a second payment by the end of June.

    Breakfasts and cooking feasts with wine and beer and cocktails with the meals.
    Honesty bar available after dinner.
    Massage (optional extra fee)
    Mackerel fishing (optional extra fee).

    Your Hosts

    Jonny and Alan, both ex-Londoners with a rich hospitality background, will be your hosts. Jonny has opened restaurants for Mark Hix, managed The Groucho Club restaurants, and opened Tapas Brindisa in Borough Market. Together, they bring their vast experience to create a memorable weekend.

    Fantastic weekend at Tresillion House in Newquay Cornwall. Very well organised hands on event with guest chef Andrew Clark showing us new cooking techniques and food combinations with some amazing top quality ingredients. Thank you Charlie Ovens for organising this event, I would go back tomorrow and highly recommend this to anyone else looking to improve there outdoor cooking skills.
