    Festive Goose and Rib of Beef Masterclass 

    This Christmas we are doing things our way. No turkey. No ham. An indulgent feast that celebrates the joy of cooking over fire. Join Chef William Podbury, an expert in live fire cooking, for a hands on Christmas cooking class designed for the Charlie Oven.

    The masterclass runs in Richmond, TW9 on Saturday 29 November from 11am to 4.30pm and includes a three course meal with drinks, a recipe booklet, and a Charlie apron and tongs worth over £50 to take home!

    What you will learn

    • How to master cooking a whole meal together in the Charlie Oven
    • Techniques for adding subtle hints of smoke to lift your dishes
    • How to roast, bake and manage heat for perfect results

    Your festive menu

    Mulled cider on arrival. Wines and beer served with the meal.

    Nibbles

    • Turnip broth with herb oil
    • Charred bread with smoked sea salt butter

    Starter

    • Scallops cooked over the embers with black garlic, clementine and Grand Marnier, chorizo crumb

    Meat

    • Reverse seared whole rib of beef with bone marrow
    • Smoked and roasted goose, deboned and rolled with festive stuffing

    Accompaniments

    • Goose fat and rosemary roast potatoes
    • Cauliflower mac and cheese with fresh truffle
    • Hay smoked carrots with butter and thyme
    • BBQ Brussels with chestnuts and pancetta
    • Rich pan gravy

    Dessert

    • White chocolate, cranberry and almond croissant bread and butter pudding

    Fantastic weekend at Tresillion House in Newquay Cornwall. Very well organised hands on event with guest chef Andrew Clark showing us new cooking techniques and food combinations with some amazing top quality ingredients. Thank you Charlie Ovens for organising this event, I would go back tomorrow and highly recommend this to anyone else looking to improve there outdoor cooking skills.
