Turkish Skewer Set User Instructions

The Turkish Skewer Grill transforms your Charlie Oven into a charcoal-fired skewer rotisserie. Designed to fit securely into any rack level inside the oven, it brings intense flame-cooked flavour to skewered meats, vegetables, and flatbreads.

What’s Included

  • 1 x Stainless Steel Skewer Rack
  • 6 x Medium Skewers (1cm wide)
  • 6 x Fat Skewers (2.5cm wide)

Holds 6 skewers at a time — mix and match depending on your cook.

Safety Information

  • Skewer tips are blunt– handle with care, especially when loading food.
  • Keep skewers out of reach of children.
  • Always wear heatproof gloves  – the handles can get extremely hot during use.
  • Skewers retain significant heat after cooking – use gloves and caution when removing or serving.

Important Notes for Charlie Owners

  • The rack fits on any rack level in all Charlie Oven models.
  • Typically used in the lower third of the oven for fast searing and intense heat.
  • Skewers cook from below (direct flame), around (radiant heat) and from within the steel will cook from the middle as it heats up – food cooks faster than on a standard BBQ.
  • Ideal oven temp: 180–250°C (356–482°F). Avoid placing directly over roaring flames.
  • Always use heatproof gloves when turning skewers – handles get hot.

Using the Skewers

Medium Skewers (1cm wide)

  • Use for cubed meats, vegetables, halloumi, etc.
  • Tips are thick and quite blunt– pierce slowly to avoid splitting delicate ingredients.

Fat Skewers (2.5cm wide)

  • Not designed for piercing. Tips are blunt by design.
  • Press or wrap food around them – ideal for koftas, rolled cuts, flatbreads, or whole fish.

Fire Setup & Cooking

  1. Use good quality lump charcoal – about half a football-sized pile in the centre.
  2. Light with a natural firelighter – never use briquettes or lighter fluid.
  3. Once the fire is going, insert the rack into your chosen rack level.
  4. Cook up to 6 skewers at a time. Rotate regularly using gloves.
  5. Monitor closely – the metal skewers radiate heat and speed up cooking.

After Cooking

  • Let all components cool completely before handling.
  • If serving immediately, remove skewers carefully using gloves or long tongs.
  • Once cooled, dispose of ash and clean the components.

Cleaning & Storage

  • No seasoning required – all parts are stainless steel.
  • Clean with warm soapy water and wire wool for any stuck-on food.
  • Dry thoroughly before storing in a dry area.

Tips for Best Results

  • Don’t overload skewers – allow airflow between items.
  • Rotate often for even charring and caramelisation.
  • Keep the oven under 250°C to reduce the risk of flare-ups.
  • Monitor food closely – the skewers will cook it from the inside as well as the outside.
  • Clean after every use to keep performance and flavour at their best.
