Roasted Gem Lettuce, Curry Butter

Ingredients

● 2 x gem lettuce, quartered
● 2 x sprigs curry leaves
● 200g soft butter
● 1 bulb roasted garlic, pulped
● 2 red chillies
● 2 x limes juiced
● 2 tbsp fish sauce

Directions

Step 1

Light a wide charcoal bed and run the oven up to 250°C. Char the lettuce over high heat in the lower part of the oven until the lettuce is charred and has softened.

Step 2

Char the chillies directly on the charcoal until blackened.

Step 3

Fry the curry leaves in the butter until golden and aromatic.

Step 4

Leave to cook for a couple of minutes and blend with the chillies, garlic, curry leaves, lime juice and fish sauce. You can cool the butter and store in the freezer for up to 3 months.

Step 5

Melt a few spoons of the butter in a frying pan and baste the charred lettuce quarters.
