Ingredients
● 2 heads broccoli, florets, lightly oiled
● 2 leeks, cleaned
● 50g butter
● 50g flour
● 550ml milk, heated
● 200g Cheddar cheese
● 100g Gouda
● 100g Stilton
● 1 tbsp Dijon mustard
● 1 tbsp Worcestershire sauce
● Salt and pepper to taste
● 100g breadcrumbs
● 50g grated Parmesan
● Tbsp chopped parsley
Directions
Step 1
Build a charcoal bed in the oven and run it up to about 180°C - and once fully combusted, place the broccoli and leeks directlky on the charcoal until charred. Remove and leave to cool.
Step 2
Remove and heavy char and slice the leeks and place into a oven dish.
Step 3
Melt the flour and butter in a pan and slowly add the milk, whisking until you have a smooth
sauce. Add the cheese, mustard, sauce and whisk again until sauce.

Pour sauce over the charred veg,

Mix together the breadcrumbs, Parmesan, parsley and season. Top dish with the cheese
crumb and roast in your Charlie Oven at 180°C for 25 minutes until golden.
