Join us for a festive masterclass to create some incredible dishes for the holiday season.  Chef James Peck will lead a hands-on class, cooking a lovely feast, perfect for Christmas.  We are making pork the hero of the class—this feast will delight your guests either as an alternative Christmas lunch or as a fantastic feast to enjoy over the festive holidays.

James Peck is the visionary behind Ember, a multi-award-winning fire-cooking restaurant in Wellingborough, recently celebrated in OpenTable's top 100. James's passion for cooking over live fire started during his Army service, before refining his craft in prestigious London kitchens. His talent shone on The Brigade TV show, where Michelin-star chef Jason Atherton selected him to lead in the grand finale. Today, alongside running Ember, James is the proud owner of Number 13 and The Four Pears in Little Houghton. He is ready to inspire you with his deep-rooted love of firecooking at Charlie Oven's festive masterclass.

Canapés

Barber cheddar & pickled walnut tartlets

Main Course

Porchetta stuffed with nduja & black garlic, cured then roasted 

Ember baked leeks, mangalitsa pork fat & burnt lemon, pine nuts

Iberico Secreto, samphire & pickled mussels, veal jus

Sticky bacon lyonnaise potatoes 

Beets cooked in the embers, whipped feta & toasted walnut

Join our exclusive cooking class where you'll learn professional chef techniques that can be easily adapted for home cooking. James will teach some of his signature dishes, all designed to bring the festive spirit to your table.  The menu will be decadent for the festive season.  You'll enjoy a two-course meal with a festive cocktail, wine, and beer.

Fantastic weekend at Tresillion House in Newquay Cornwall. Very well organised hands on event with guest chef Andrew Clark showing us new cooking techniques and food combinations with some amazing top quality ingredients. Thank you Charlie Ovens for organising this event, I would go back tomorrow and highly recommend this to anyone else looking to improve there outdoor cooking skills.
