BBQ Side of Salmon

A simple yet stunning way to cook a whole side of salmon in your Charlie Oven. Laid on a bed of sliced oranges, fennel, and fresh parsley, the fish roasts beautifully at high heat with a subtle smoky finish from a piece of oak wood.

Method

  1. Trim the salmon and remove any scales left on the fish.
  2. Slice the oranges and fennel into 5cm slices.
  3. Roughly chop the parsley.
  4. Select a large heatproof tray - a gastronome pan works well and is available from catering suppliers or Amazon.
  5. Place the orange and fennel slices and the flat leaf parsley across the bottom of the tray.
  6. Drape the salmon across the top, drizzle with olive oil and season with salt and pepper.
  7. Place in the Charlie Oven pre-heated to 200 degrees Celsius and cook for around 30 minutes.
  8. Check for doneness by sliding a small knife into the thickest part of the fish - if there is no resistance, it is done.
  9. Remove from the oven promptly as the fish will continue to cook once out of the oven.
