Ingredients
-
4 tablespoons sriracha
-
1 cup brown sugar, packed
-
2 cups ketchup
-
3 tablespoons Worcestershire sauce
-
1 cup bourbon Whiskey (we like Jim Bean)
-
4 tablespoons apple cider vinegar
-
4 tablespoons soy sauce
-
1 teaspoon garlic powder
-
2 teaspoons sweet smoked paprika
-
1/2 teaspoon cayenne pepper
-
Pinch of smoked salt
Directions
-
Mix all the wet ingredients together in a bowl and add the dry ingredients and mix together.
-
Use as a marinade for pork ribs, pork shoulder, pork butt, a whole chicken or chicken wings.
-
Marinate the meat for a minimum of 30 minutes or up to 24 hours.
-
Wipe off the excess sauce before cooking.
-
Skip the marinating step if the meat will be cooked at a high heat as the sugar will burn the outside before the inside has a chance to cook. Instead, use the bbq sauce as a glaze every 30 minutes in the cooking process.
-
If smoking is part of the cooking process for the meat, smoke the meat for one to two hours before adding the bbq sauce. Apply the sauce in thin layers as a glaze or pour the bbq sauce all over the meat and leave to cook.
