Baked Eggs with Sobrasada, Vacherousse Cheese & Honey

A Brunch Dish, Perfect for Sharing

This indulgent dish brings together the rich, spicy flavours of Sobrasada, the creamy melt of Vacherousse d’Argental cheese, and a drizzle of sweet honey—all cooked to perfection in the Charlie Oven. Paired with charred sourdough, this is a hands-only, no-cutlery-required kind of feast!

Ingredients

  • 100–150g Sobrasada
  • 2–3 high-quality eggs
  • 100g Vacherousse d’Argental cheese (cut or torn into small pieces)
  • A few sprigs of fresh thyme
  • Sourdough or bread of choice (sliced)
  • Good quality honey (for drizzling)
  • Extra Virgin Olive Oil (for drizzling on bread)

Instructions

Step 1 – Prepare Your Charlie Oven

  • Light your Charlie Oven and preheat it to around 180°C / 356°F. You will need roughly the size of half a football of charcoal. 
  • Set the cooking rack to the 2nd or 3rd runner from the bottom to achieve medium, direct heat.

Step 2 – Cook the Sobrasada

  • Tear or portion the Sobrasada into small, rough pieces and place them in a small 8-inch cast iron skillet or pan.

  • Place the skillet in the Charlie Oven and cook for 5 minutes, allowing the Sobrasada to release its rich, deep oils.
  • Carefully remove the hot pan and set it aside on a heat-safe surface.

Step 3 – Add Eggs, Cheese & Thyme

  • Rearrange the Sobrasada in the pan to create space for the eggs.
  • Crack the eggs directly into the pan over the Sobrasada.
  • Scatter the Vacherousse cheese pieces around the eggs.
  • Add a few sprigs of fresh thyme for aroma and flavour.

Step 4 – Bake the Eggs & Toast the Bread

  • Return the pan to the Charlie Oven and bake for another 5 minutes.
  • After 5 minutes, place the sourdough slices (drizzled with olive oil) onto the rack to toast alongside the eggs.
  • Bake until the egg whites are just set but the yolks remain golden and runny.

Step 5 – Finish & Serve

  • Once ready, remove the skillet and the charred sourdough from the oven.
  • Drizzle honey generously over the eggs and Sobrasada for a perfect balance of sweet and savoury.
  • Serve immediately with the toasted sourdough for dipping.
