Interinery
Thursday
From 4pm: Arrival
Arrive at Tresillian House, settle into your room, and take some time to explore the house and gardens.
5.30pm: Sourdough with Jay
We will begin making sourdough with Jay, working through each stage over the course of the weekend. The session is optional, so you are equally welcome to settle in and relax.
6.30pm: Brindisa pintxos
We will open the weekend by making a selection of pintxos using Brindisa ingredients. Jay will show us how to bring together great Spanish produce to make simple bites to enjoy before dinner.
7.30pm: Welcome dinner
Jonny and Tara will prepare slow-cooked milk fed lamb with lentils, followed by dessert.
Friday
Breakfast
Help yourself to breakfast and start the morning at your own pace.
11am to 1.30pm: The Spanish table
Together with Jay, we will make Spanish tortilla with Serrano ham, pan con tomate, homemade aioli and a selection of dishes using Brindisa ingredients. Once everything is ready, we will sit down and enjoy it together for lunch.
Free afternoon
The afternoon is yours to enjoy. Explore the gardens, go for a walk, read by the fire or book a massage.
4pm: Paella over fire
We will come back together to cook paella over charcoal. Guests can choose between a seafood paella and a meat paella.
Jay will show us how to build flavour in the pan, manage the fire and create the crisp layer of rice at the bottom.
6.30pm: Spanish wine tasting
A sommelier will lead a relaxed tasting of Spanish wines chosen to complement the evening’s food.
7.30pm: Paella dinner
We will sit down to enjoy the paella, followed by orange and almond cake.
Saturday
Breakfast
A relaxed help yourself breakfast will be available in the morning.
11am to 1.30pm: Spanish lunch with Brindisa
Saturday begins with a hands on session centred around Fabada Asturiana, a rich Spanish bean dish made with Brindisa chorizo, white beans and sourdough pancetta. We will prepare a selection of dishes to serve alongside it before sitting down for lunch together.
Free afternoon
There will be time to enjoy Tresillian, explore the Cornish countryside or book a massage.
4pm: South American inspired fire cooking
Our final cooking session brings a fresher South American feel to the menu.
We will prepare dishes including Brazilian chicken with annatto, achiote and citrus, Cuban style onglet steak with coffee, maple and lime dressing and Peruvian slow cooked pork with pineapple sauce and green vinaigrette.
Jay will show us how to manage the fire and use sharp, fresh sauces and dressings to balance the smoky richness of food cooked over charcoal.
6.30pm: South American inspired cocktails
We will make fresh, zingy cocktails inspired by the flavours of South America before sitting down for our final dinner.
7.30pm: Saturday night dinner
We will end the weekend around the table, sharing the food prepared during the afternoon.
Sunday
Enjoy a final breakfast before checking out and heading home. We will complete the sourdough making that we started on Thursday, with plenty of tips from Jay for making it again at home.

FAQs
Can I book for one person?
Yes, single guests are welcome to book a twin room with a £50 supplement charge.
Is the price per person?
Yes. Prices are per person and based on two guests sharing a room.
Can I book a massage?
Yes. Massages are available to book separately during your stay. Free time is built into the weekend so you can enjoy one without missing a cooking session.
Do i need cooking experience?
No. The retreat is suitable for complete beginners as well as confident cooks. Jay, Jonny and Tara will guide you through each technique, and there will always be someone nearby to help.
I live in Cornwall. Can I come as a day guest?
