Room Type

Join us for three nights of fire cooking, great food and time to relax at Tresillian House in Cornwall. This will be our third year at Tresillian and the menu is shaping up to be something rather special.

At the heart of the weekend is Spanish cooking, with some of our favourite ingredients from Brindisa used throughout. The menu also takes inspiration from South America, bringing fresh herbs, citrus, fruit, chillies and bright, zingy sauces to food cooked over charcoal.

The cooking sessions will be led by Jay Porthouse, an experienced fire-cooking teacher and master baker who lived in Spain for many years. Jay has a real understanding of Spanish ingredients, bread making and the relaxed way food is cooked and shared. Her teaching is friendly, practical, and enjoyable whether you are a complete beginner or already confident in the kitchen.

Between cooking sessions, there will be time to explore the gardens, go for a walk, enjoy a glass of wine or book a massage during your stay.

The food

Brindisa ingredients will run through the weekend, from the first pintxos on Thursday evening to Saturday’s Spanish lunch. We will cook with Spanish chorizo, charcuterie, beans, peppers, rice, olive oil and other carefully sourced ingredients.

South American inspiration will bring freshness and contrast, with citrus marinades, pineapple sauce, green vinaigrette and coffee, maple and lime dressing served alongside food cooked over fire.

Time to relax

The cooking sessions are carefully spaced, so the weekend never feels rushed. Between them, you can enjoy the house and gardens, walk through the Cornish countryside, or simply settle down with a glass of wine.

Massages are also available to book separately during your stay.

Tresillian House is a beautiful Georgian country house in the Cornish countryside. Jonny and Alan are wonderful hosts who make the whole weekend feel relaxed and welcoming from the moment you arrive.
