2 handfuls of parsley
● 1 bunch of tarragon
● 1 bunch of mint leaves
● 1 x bunch basil leaves
● 1 x green chilli, deseeded and finely chopped
● 2 x cloves garlic, peeled and finely chopped
● 1 x tin anchovies, chopped
● 2 tbsp capers
● 150ml cider vinegar
● 200ml extra virgin olive oil
● Salt and pepper
Hand chop all the herbs, and mix with the rest of the ingredients.
Season to taste.
