Join us as we welcome Chef Mark O'Brien to teach a masterclass in Carolina Style BBQ on the Charlie Oven.
A Dublin-born chef who has cooked at some of London’s most respected live-fire restaurants such as Barbecoa, Smokestak, Counter Culture (at The Dairy), and Birch (Zebra Riding Club). And during a tour of the US, he added Mc Crady’s & FIG (Charleston), Staplehouse (Atlanta), Husk (Nashville), and Contra & Beatrice Inn (NYC) to the list. Currently, Mark is the head chef at Samphire in Whitstable.
Mark will share his skills in cooking a selection of Carolina Barbecue staples like Pit Beef, Smoked Pork Shoulder, Half Chickens, and some great sides. You will join Mark in learning and practising food prep, butchery, spice mixing ... and much more. Culminating in a big feast for all the guests where they sample their work.
Mark is experienced cooking on the Charlie Oven at the Workers League in Whitstable. He brings his depth of knowledge of fire cooking combined with his amazing butchery skills together for an unforgettable masterclass!
