Charlie Oven all began from a love of baking bread.  We're delighted to announce our first bread-making masterclass with the wonderful baker - David Wright -   
aka @thebreaducator.

David is a baker, author and teacher. He's worked for some of the UK’s best bakers and bakeries, including Lily Vanilli, The Dusty Knuckle and Pump Street Bakery where he is currently the Head Baker. David comes from a line of bakers going back to the 1940s. He lives in Suffolk with his wife and kids; when he isn’t baking, David plays cricket and drinks fancy coffee. 


On the course, you will learn the secrets of baking - and bake three completely different types of delicious bread.  You'll learn how to manage live fire for baking  (many home bakers don't appreciate the importance of the oven temperature). We will show you how to do it in the Charlie Oven. 

You'll learn about pre-ferments and make your own to take home. Next, you'll get hands-on experience learning to mix the dough and take it through mixing, kneading, folding, and shaping. Then finally, baking. You'll take home your creations and a baking goodie bag.

We'll make our lunch and discuss the nitty-gritty of everything to do with flour, baking and using fire to make it happen.


This course is suitable for all levels.

Menu
Ciabatta - an excellent introduction to Italian bread.
Detroit Pizza - an American-style pizza which has a light and fluffy texture.  We will create toppings using the Charlie Oven, like dirty onions and garlic.  We will experiment with d toppings. 
Maple Bacon Lardy Cake - we don't use lard in this recipe, we use butter instead.  You can use smoked bacon fat if you like.  This enriched dough is like a brioche dough with layers of crumbly bacon.  It's a show-stopper.
